Black Pudding, Egg & Cheese Bap

Nevermind Marmite, the other black breakfast food that people either love or hate is black pudding.

I think a lot of folks are just put off by the fact that one of the main ingredients is blood, and their squeamishness prevents them from finding out that it’s actually really very tasty.

In spite of my Yorkshire roots, I tend to favour Irish or Scottish black puddings, which use oats as their bulking agent. Laverstoke Park Farm and Clonakilty both fit this category, and come highly recommended.

This is an easy hangover-busting breakfast or brunch roll.

Ingredients

  • Black pudding, sliced
  • Eggs
  • Bread rolls
  • Sharp cheddar, grated

Directions

Fry the black pudding slices for about 3 or 4 minutes on each side - don't overcook them, or they become hard and crumbly.

Fry the eggs.

Slice the rolls in half, and butter them if you like (I do).

Add grated cheese, then black pudding slices, and top with the egg.
